The Colonial: A Thriving Gastropub with a Taste for Creativity!

The quality food, vast selection of beer, congenial and innovative staff, and inviting atmosphere are elements that continually attract crowds and bring customers back to The Colonial. Court Street Hospitality Group, the entity that owns The Colonial, is made up of five partners, each bringing a unique expertise and fresh perspective to the restaurant. One of the five partners and General Manager Jordan Rindgen said that to operate a successful restaurant you must manage your time wisely, never become complacent, and remember to have fun. The Colonial has stayed true to their vision of delivering excellent food, adapting to consumer needs, and exceeding guest expectations since opening two years ago.

Each menu item at The Colonial showcases modern twists on classic pub fare, offering one-of-a-kind options for a broad range of diners. The team of chefs collaborates to update the menu bi-yearly, working to improve items and create dishes that are seasonal and innovative. Sandwiches are the focus of the late night menu, exploring the classics in new ways. “There is nothing more American than the sandwich,” Rindgen claimed. “Our chefs put extreme effort into creating every sandwich, usually working for months to perfect it before it appears on the menu.” The most popular sandwiches include the PB&J Burger, the Colonial Burger, Southern Chicken Sandwich, and the Reuben. In coming months, you’ll see more intriguing sandwiches such as a Chicken Burger along with a vegetarian Quinoa “Meatball” Sub.

Offering 21 rotating craft beers on draft, a wide variety of wines, specialty cocktails, and rotating frozen drinks, the impressive drink selection and happy hour specials make it a go-to place any night of the week. Diverse crowds are attracted to the locale with special events such as Tuesday Trivia Nights, Wine Down Wednesdays, and “Yuengs ‘n Wings” every Thursday. And no matter what dish you choose for brunch, you can enjoy bottomless mimosas with any food purchase. Or, try the infamous, noteworthy, and appropriately named Large & In Charge Bloody Marge that contains 32 ounces of Bloody Mary topped with skewers of mozzarella sticks, shrimp sliders, wings, bacon, grilled cheese, and veggies.

The Colonial has a strong partnership with the Maines team and is continually impressed with the way they effortlessly handle business and deliver exceptional products. Rindgen said, “Maines is incredibly easy to work with. They are flexible, well priced, and can get us what we need in a timely fashion. Dawn Ciccone, our Territory Manager, is the absolute greatest!” Maines inspires The Colonial to reach new heights and always seek out up and coming trends. The owners are so ecstatic with their accomplishments at this venture that they plan to open a high-energy Mexican restaurant with a contemporary atmosphere, perfect for private parties or large groups. It will have a similar vibe to The Colonial while serving modern twists on Mexican classics.

Whether it’s special event extravaganzas or new ways to innovate the menu, The Colonial is always determined to stay up to date, adapt to the needs of the community, and continue to let their culinary imaginations lead them to success.
