Peanut Butter Mousse
  1. Beat cream cheese, peanut butter, sugar, butter and vanilla extract in an 8-quart mixer fitted with a paddle attachment on low speed for 2 minutes. Increase speed to high; beat until smooth, about 3 minutes. Transfer mixture to a bowl
  2. Beat heavy cream with whisk attachment on medium-low speed until it starts to thicken, about 2 minutes. Increase speed to high; beat until medium peaks form. Fold into peanut butter mixture until just combined.
Chocolate Covered Peanut Bark
  1. Melt chocolate in a microwave oven for 20 second increments until no lumps remain, stirring after each increment. Stir in peanuts.
  2. Pour chocolate mixture into parchment-lined ½ sheet tray; sprinkle with sea salt.
  3. Refrigerate until hardened; remove bark from sheet tray and break into 3-inch pieces
For Serving
  1. Pipe Peanut Butter Mousse into 6-ounce dessert dish; garnish with bark
