Twenty years ago, Kevin Boylan opened his first restaurant with some friends “on a whim” and never looked back. Kevin’s Bar & Restaurant was opened by Kevin and Janet Boylan in September 2010. Kevin and Janet have more than 20 years in the restaurant business, including Boylan’s Irish Pub and Thirty-One Lake Street.
Today Kevin pours his heart and expertise into Kevin’s Bar and Restaurant, located in a unique and charming industrial space located at 247 Wyoming Avenue in Kingston. At Kevin’s Bar & Restaurant, they have created the ultimate casual dining experience with a menu guaranteed to please everyone in the family. With an emphasis on refined yet creative cuisine, the menu incorporates both traditional classic favorites and original new dishes. Acclaimed favorites include the Dry-Aged New York Strip Steaks and Prince Island Oysters. Located in the heart of Kingston, the modern yet rustic interior lends itself to the rich vibrancy of the area. The main restaurant seats 100, while the upstairs martini lounge can host private parties for up to 50 guests.
One thing Boylan has learned throughout his years in the business is that consistency is the key, and it’s a philosophy he carries through to all aspects of his business. From ingredients to features to pricing and service, being reliable is his priority. “The most important part of upscale casual dining is consistency, in that the first dish of the night that goes out until the last dish should be the same quality,” said Boylan during a recent interview.
Kevin’s Bar & Restaurant has an upscale but comfortable atmosphere, offering a range of menu and price options. Describing the menu as “eclectic,” Boylan is quick to offer his dry-aged steaks and fresh oysters as his specialties. Boylan says he has a strong group of regular customers who come in because of his consistently good food. “Word of mouth is my best advertising, because people know they will get a good, solid meal here every time,” Boylan says.
Kevin’s opened in 2010, but Boylan has been working with Maines and his representative, Dan Lello, since the 1990s. “Dan is my partner,” said Boylan. “He consults with me on my business like it’s his own.” In fact, it was his relationship with key people at Maines that was instrumental in getting him into the business so many years ago. Besides a great relationship, Maines offers Boylan consistently high quality products, and he counts on them for fresh meat, seafood, and produce, which goes right along with his business philosophy.
His advice to aspiring restaurateurs? It’s important to look at your purveyor as a partner and not just for pricing. His partnership with Maines goes both ways—they are proud to be a part of his success.
