Buttermilk Blue Dressing
  1. Combine all of the ingredients and mix well. Chill and reserve for service.
Lardons
  1. Stack the slices of bacon and place in the freezer for 30 minutes.
  2. Remove from the freezer and slice in 1/8” slices.
  3. Cook the bacon in a saute pan until golden brown and just beginning to crisp.
  4. Drain the bacon, reserving the fat for another use. Sore the bacon until ready to use.
Salad
  1. Arrange the baby iceberg quarters in the center of a plate.
  2. One by one, scatter the tomatoes, scallions, blue cheese, cucumber, red onion and bacon over and around the lettuce.
  3. Carefully drizzle the dressing over and around and serve immediately.
