- 3½cup coconut water
- 1cup fresh blueberries
- ½cup diced cucumber
- ½cup honey
- ½cup fresh lemon juice
- 1tbsp plus 1 tsp lemon zest
- ½tsp finely grated fresh ginger
- Muddle 2 tablespoons coconut water, ¼ cup blueberries, 2 tablespoons cucumber, 2 tablespoons honey, 2 tablespoons lemon juice, 1 teaspoon lemon zest and ⅛ teaspoon ginger in a cocktail shaker; add ¾ cup coconut water and ice cubes. Shake vigorously and strain into rocks glass filled with ice cubes. Garnish with blueberries, cucumber slices and a lemon zest twist.
