  1. Combine dry ingredients in a mixing bowl.
  2. In separate bowl, whisk eggs and butter and add buttermilk. Add dry ingredients to wet and mix gently. The batter should be slightly lumpy.
  3. Let the batter sit for five minutes before using. Prepare waffles to order or ahead of time a reheat to order.
Peach and Basil Syrup
  1. Bring water, sugar and lemon juice to a boil stirring to dissolve sugar. Add vanilla bean and peaches and bring to a bare simmer.
  2. Remove from heat and cool. Remove vanilla bean pod and discard. Stir in basil leaves and refrigerate 4 hours or overnight before use.
To Serve
  1. Make waffles to order or reheat previously made waffles.
  2. While waffles are cooking, warm ½ cup of peach syrup in a saute pan. Plate waffle and top with peach and basil syrup. Garnish with extra basil leaves.
