Instructions
For the Asian Grilled Pork
  1. Season pork with salt and pepper. In a bowl, whisk together garlic, oil, gochujang, green onion, shallot, ginger, soy sauce, lemongrass and sugar. Brush mixture over tenderloin and refrigerate for 2 hours.
  2. Heat grill over medium-high heat. Grill pork 2 minutes; turn 90 degrees and grill 2 more minutes. Turn over and repeat on the other side. Remove from heat.
  3. Place on a sheet tray lined with a rack and roast in a 350°F oven until the internal temperature reaches 140°F. Let rest and slice.
For the Sesame Broccoli
  1. Blanch and shock broccoli.
  2. In a bowl, add the garlic, green onions, sugar, sesame oil, sesame seeds, soy sauce and cayenne; whisk to combine. Add broccoli and toss to combine. Yield: 1½ cups.
For the Miso Tahini Dressing
  1. In a blender, add all ingredients; blend on high until smooth. Yield: 1 cup.
For the Soba Noodles
  1. Over high heat, bring a pot of salted water to a boil; add soba noodles. Cook 4 minutes or until tender; drain and rinse under cold water.
  2. In a bowl, add lime zest, vinegar, olive oil, lime juice, sesame oil, and sugar; whisk to combine. Add soba noodles and toss to combine. Yield: 4 cups.
To Serve
  1. In a bowl, add 1 cup soba noodles, 4 oz pork, ¼ cup asparagus, ¼ cup pepper curls, ¼ cup carrots, ¼ cup cucumber and ¼ cup daikon; toss to combine. Place in serving dish and sprinkle sesame seeds on top. Serve Miso Tahini Dressing on the side with a drizzle of sesame oil on top.
