Crab & Parmesan Topping
  1. Fold crabmeat, cheese, and butter in a bowl. Refrigerate in an airtight container up to 3 days. Makes about 1 cup.
For Serving
  1. Thoroughly dry one piece of cod with paper towel. Season cod with salt and pepper; top with crabmeat mixture. Bake at 350°F until internal temperature reaches 145°F, about 15 minutes.
  2. Sauté 2 ounces mushrooms in 1½ teaspoons butter in a skillet over medium heat until soft and lightly browned, about 5 minutes, stirring frequently; transfer to a bowl.
  3. Sauté ¼ of the leeks in 1½ teaspoons butter in a skillet over medium heat until leeks begin to soften, about 2 minutes; add 1 tablespoon water, cover and reduce heat to low; Cook until leeks are soft, about 10 minutes; stir in 1 cup spinach, 2 tablespoons cream, salt and pepper.
  4. Serve cod and mushrooms over leek mixture. Garnish with cheese.
