Donuts are a classic American morning treat. Stand out from the crowd by offering unique presentations and flavor profiles. For example, donut fries are perfectly shaped for dipping. Allow for customization by offering more than one sauce.  Incorporate matcha for a twist on a white chocolate sauce, and don’t forget the always popular caramel!

Instructions
For the Donut Fries
  1. In a bowl, whisk all-purpose flour, cake flour, dry milk, baking powder, cinnamon and salt. In a separate bowl, beat sugar and vegetable shortening with a mixer on low speed for 2½ minutes. Beat in eggs yolks, egg and vanilla extract on low speed 1½ minutes; beat in the water. On low speed, add flour mixture in 3 additions, 1½ minutes after each addition. (Note: dough will be sticky.)
  2. Transfer dough to a liberally floured work surface. Let stand 15 minutes. Liberally sprinkle the dough with flour. Knead the flour into the dough. Turn dough over; sprinkle with flour. Roll dough out into an 8x11-inch rectangle, approximately 3/8 inch-thick. With a pizza cutter, cut the dough lengthwise, then cut crosswise into 4-inch strips. Place on 2 parchment-lined sheet trays sprayed with pan spray; rest 30 minutes. Yield: 64 donut fries.
For the White Chocolate Matcha Sauce
  1. In a saucepot, heat half and half. Bring to simmer, remove from heat. Add chocolate and butter; whisk until smooth.
  2. Add matcha and use an immersion blender to blend until smooth. Yield: 2½ cups.
For the Browned Butter Salted Caramel Sauce
  1. In a saucepot, heat the butter to a simmer. Let cook until it changes color and becomes a golden to dark brown color; remove from heat and cool.
  2. In 4-quart heavy-bottomed saucepot, heat sugar and water to boiling over high heat. In separate saucepot, heat cream and salt to simmer over medium heat; remove from heat and cover to keep hot.
  3. Once sugar mixture comes to a boil, continue to boil for about 5 minutes. Reduce heat to medium-high and cook 8 minutes or until the syrup is a dark amber color, watching closely so it doesn’t burn. Remove from heat; a candy thermometer should read between 340°F and 360°F at this point.
  4. Pour ½ cup hot cream into sugar mixture allowing bubbles to diminish. Add remaining cream, allowing bubbling to diminish. Whisk in browned butter and let cool. Yield: 2 cups.
To Serve
  1. Heat oil in a deep fryer to 380°F. Fry donuts in batches for 2 minutes or until golden brown. Place 4 hot donut fries in a paper-lined fry cone. Serve with a side of White Chocolate Matcha Sauce and a side of Browned Butter Salted Caramel Sauce.
