Heat oil in a saucepan; add onion and cook over medium heat until softened and beginning to brown. Stir in brown sugar, garam masala and salt; deglaze with vinegar. Stir in cherries; cook until mixture thickens.
For the Burger
Gently mix the ground chuck and short rib blend, ground brisket, salt and pepper; shape into a patty
Preheat grill on high (approximately 400°F). Grill burger for 3–5 minutes; flip burger and cook about 3–5 minutes longer to desired doneness, topping with cheese during last 2 minutes of cooking.
Cook egg in oil in a skillet sunny-side up or to desired doneness.
