Lobster Ravioli with Speck and Mascarpone

  1. Heat a medium sauce pot and add oil until it shimmers. Saute onions until soft and translucent then add minced garlic and cook for 5 minutes. Deglaze with white wine and cook until dry. Add tomatoes, stock, and heavy cream and simmer until sauce slightly thickens. In a pot of boiling water, add the raviolis and cook for 7-8 minutes. Drain, then add to the sauce peas, mascarpone, rendered browned speck, cubed butter and stir till thick. Season with parsley and cheese to serve.
