Mustard-Molasses Glazed Bacon
  1. Bake bacon at 375°F on parchment-lined sheet tray until most fat has rendered and bacon is just starting to crisp, about 20 minutes; reserve ½ cup bacon grease.
  2. Whisk remaining ingredients in a bowl; brush over bacon. Bake until caramelized and crisp, about 10 minutes. Refrigerate in an airtight container up to 6 days.
Bacon-Infused Mayonnaise
  1. Purée egg yolks, egg, and mustard in a food processor on high; with processor running, slowly add reserved bacon grease and canola oil in a thin stream. Add lemon juice, salt and pepper; process until incorporated. Refrigerate in an airtight container up to 6 days. Makes about 1¼ cups.
For Serving
  1. Melt 1 tablespoon butter in large sauté pan over medium heat; add 2 slices bread and cook until golden brown and toasted, about 3 minutes on each side. Remove bread from pan.
  2. Add about 5 strips bacon to pan and cook until heated through and crisp, about 3 minutes.
  3. Spread Bacon-Infused Mayonnaise on 1 side of bread slices; assemble sandwich with bacon, tomatoes and arugula blend.
