Instructions
Peruvian Lobster
  1. Whisk all ingredients, except lobster, in a bowl; add lobster meat and gently toss. Cover and refrigerate 1 or up to 8 hours.
Taro Chips
  1. Deep-fry taro slices at 350°F until golden brown and crisp, about 5 minutes, turning once; remove with a slotted spoon to paper towel-lined sheet tray and sprinkle with sea salt. Cool completely; store in an airtight container at room temperature up to 3 days.
For Serving
  1. Place bibb lettuce leaves on a serving plate. Arrange lobster mixture and orange segments over lettuce; garnish with cilantro, basil, jalapeño, and Himalayan salt. Serve with Taro Chips.
