Pecorino & Herb-Breaded Portobello and Eggplant Fries
  1. Combine ½ cup flour, breadcrumbs, cheese, seasoning and pepper in a shallow pan; stir remaining 1 cup flour and salt in a second shallow pan; whisk eggs and ¼ cup water in a third shallow pan. Dredge vegetables in flour mixture, coat with egg mixture then breadcrumb mixture, pressing breadcrumb mixture into vegetables to adhere; place on a wire rack lined sheet tray. Cover and refrigerate up to 2 days. Makes about 8 cups.
Spicy Tahini-Honey Sauce
  1. Whisk all ingredients in a bowl; refrigerate in an airtight container up to 6 days. Makes about 1 cup.
Green Tomato Ketchup
  1. Purée all ingredients in a food processor; cook in a saucepan over medium heat until slightly thickened, about 25 minutes, stirring frequently. Purée tomato ketchup in a food processor. Refrigerate in an airtight container up to 6 days. Makes about 1 cup.
For Serving
  1. Deep fry 2 cups Pecorino & Herb-Breaded Portobello and Eggplant Fries in vegetable oil at 375°F until golden brown, about 4 minutes. Serve fries with ¼ cup each Spicy Tahini-Honey Sauce and Green Tomato Ketchup garnished with 1½ teaspoons cheese.
