Instructions
  1. Rinse and pat dry both chickens. Using the kitchen twine, truss both chickens.
  2. Combine Sambal, oil, garlic, ginger and sea salt and mix well.
  3. In a large zip lock bag combine the chickens and Sambal mixture and thoroughly coat. Remove as much air as possible from the bag, seal, and refrigerate for 24 hours.
  4. The next day, remove chickens and place on a roasting rack. Cover each chicken with remaining marinade from the bag.
  5. Roast the chickens at 325°F, basting with the marinade every 15 minutes, until golden brown, fragrant, and the internal temperature reaches 165°F.
  6. Remove from the oven and rest 20 minutes. Remove the twine and serve family style on large platter with cilantro sprigs and lime wedges.
