- 12oz Villa Frizzoni spaghetti
- 1 large red bell peppersliced into thin strips then cut into 2-inch pieces
- 1 large cucumberpeeled, seeded, and sliced into thin strips then cut into 2-inch pieces
- 1cup matchstick carrots
- ¾cup chopped green onions
- ½cup chopped cilantro
- ½cup Katy's Kitchen lightly salted roasted peanutsroughly chopped
- Katy's Kitchen Sesame Seedsfor garnish
Peanut Sauce
- ½cup Katy's Kitchen creamy peanut butter
- ¼cup warm water
- 3tbsp soy sauce
- 2tbsp Katy's Kitchen honey
- 2tbsp srirachamore or less to taste
- 2tbsp fresh lime juice
- 1½tbsp peeled and minced fresh ginger
- 1tbsp minced garlic
- 1tbsp sesame oil

Instructions
- Cook spaghetti according to directions listed on package. Meanwhile prepare peanut sauce by combining all sauce ingredients in a mixing bowl, whisking until well blended and smooth.
- Drain pasta and pour into a large serving bowl. Toss with sauce then add bell pepper, cucumber, green onions, cilantro, and peanuts and toss lightly. Sprinkle with sesame seeds and serve.
