Green Curry Pork
  1. Toss all ingredients in half hotel pan; cover and refrigerate at least 4 or up to 24 hours to marinate
Crispy Sticky Rice
  1. Rinse rice in fine-mesh sieve under cool running water until water runs clear. Heat rice and 2½ cups water to a boil in a medium saucepot over high heat, stirring occasionally. Reduce heat to low and cook, covered, 15 minutes or until liquid is absorbed
  2. Remove from heat; let stand, covered, 10 minutes. Gently fold in vinegar; spread on sheet tray and cool completely. Refrigerate in an airtight container up to 3 days. Makes about 4 cups.
Spicy Candied Peanuts
  1. Toss all ingredients in a bowl; transfer to parchment lined sheet tray. Bake at 350°F for 20 minutes, rotating once. Store in an airtight container at room temperature up to 2 weeks. Makes about 1 cup.
Nuoc Cham
  1. Whisk all ingredients in a bowl. Refrigerate in an airtight container up to 6 days. Makes about ½ cup.
For Serving
  1. Preheat grill on high heat; grill ¼ pound pork until nicely charred, about 3 minutes per side.
  2. Heat ½ tablespoon sesame oil in a medium sauté pan over medium-high heat; add 1 cup cooked rice and cook until crispy on 1 side, about 3 minutes. remove from heat; drizzle with ½ tablespoon soy sauce.
  3. Toss ¼ cup each papaya and carrots, 2 tablespoons each cilantro, mint, and basil, and 2 tablespoons Nuoc Cham in a bowl.
  4. Serve rice topped with carrot-papaya salad and pork; garnish with ¼ cup peanuts.
