Sweet Ginger Ponzu Sauce
  1. Whisk all ingredients in a saucepan; heat to a boil over medium-high heat. Reduce heat to low; simmer until slightly thickened, about 20 minutes. Strain through fine-mesh strainer; cool. Refrigerate in an airtight container up to 6 days. Makes about 1 cup.
Seasoned Black Rice
  1. Stir all ingredients and 3 3/4 cups water in a saucepan; heat to a simmer over medium-high heat. Reduce heat to medium-low; cook; covered, until water is completely absorbed, about 35 minutes. Transfer rice to a hotel pan; hold warm in steam table for service. Makes about 6 cups.
For serving
  1. Top 1 1/2 cups Seasoned Black Rice with 2 ounces each salmon and tuna, 1/4 avocado, 1/4 cup each mango and seaweed salad, 2 tablespoons radish, and 1 tablespoon each ginger, green onion and jalapeno; drizzle with 3 tablespoons Sweet Ginger Ponzu Glaze and sprinkle with sesame seeds.
