Watermelon & Tamari Brined Pork Chops
  1. Heat all ingredients, except pork chops, to a boil in a saucepot over high heat; cool. Add pork chops; cover and refrigerate 8 or up to 24 hours. Remove pork chops from brine, pat dry; refrigerate in an airtight container up to 2 days.
Lemongrass-Mint Vinaigrette
  1. Purée all ingredients, except oil, in blender on high speed; with blender running, slowly add oil in a stream until emulsified. Refrigerate in an airtight container up to 6 days. Makes about 1 cup.
Thai-Style Crispy Shallots
  1. Cook shallots and oil in a saucepan over medium heat until the oil reaches 210°F, about 5 minutes, stirring occasionally. Reduce heat to medium-low; cook until shallots are golden brown, about 10 minutes. Remove shallots with a slotted spoon to paper-towel lined sheet tray; sprinkle with salt. Cool; store in airtight container at room temperature up to 3 weeks. Makes about 1 cup.
Roasted Spicy Watermelon Seeds
  1. Dissolve salt in warm water in a bowl; add seeds and soak 1 hour. Drain seeds and pat dry with paper towel; in a bowl, toss seeds with oil, chile flakes and peppercorns. Transfer to a parchment-lined sheet tray; roast at 325°F until toasted and dry, about 15 minutes. Cool; store in an airtight container at room temperature up to 2 weeks.
Pickled Watermelon Rind
  1. Heat all ingredients, except watermelon rind, to a boil in a saucepot over high heat; add watermelon rind and heat to a boil. Boil 1 minute; remove from heat and cool. Refrigerate in an airtight container at least 2 hours or up to 5 days. Makes about 3 cups.
For Serving
  1. Brush pork chop with 1 teaspoon olive oil. Grill pork chop over medium heat 15 minutes or until internal temperature reaches 145°F, turning once.
  2. Toss arugula, watermelon and Lemongrass-Mint Vinaigrette in a bowl. Arrange pork chop and arugula salad on serving plate; garnish with Thai-Style Crispy Shallots, Roasted Spicy Watermelon Seeds, and Pickled Watermelon Rind.
